First off, I want to thank my friend Amanda for sharing this salsa recipe with the world on her blog nearly a year ago. Her family calls it what it is - Avocado Feta Salsa. To me, anything with Feta leans toward the Greek, and my family began calling it Greek Salsa. I hope you won’t mind, Amanda!
I thought it would make a nice healthy snack for us to switch things up - after all, there are healthy fats out there, like those found in avocados.
I decided to whip us up a batch to go with our Baked Tostidos Scoops I had bought the other day.

Anyway, it is AWESOME. The flavors are perfect with each other and it so fresh and just wonderful. I get rave reviews on it each time someone new samples it. If you like regular salsa, you MUST give it a try!
Greek Salsa
from Like Sprinkles on a Cupcake
- 1 avocado, chopped
- 2 roma tomatoes, diced
- 1/4 cup red onion, finely diced
- 1 clove garlic
- 1 tablespoon fresh parsley
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 4 ounces feta
Toss together avocado, tomatoes, onion, garlic, and parsley. Gently stir in red wine vinegar and olive oil. Stir in feta. Cover and chill for at least 30 minutes.

That salsa looks delicious! We have started buying the baked multigrain tostitos too, so I am going to definitely try this recipe!
